What is Single Malt Scotch?
A single malt scotch is an aged liquor made from single malt barley and bottled from a single distillery in Scotland. Unlike blended scotch which may be bottled from several distillery and mixed with other grains like Rye, Single Malt Scotch uses only one distillery and it's only grain is malt. For any liquor to be called, scotch, it must be matured in Oak Casks for a minimum of 3 years in Scotland. The result of a single malt, single distillery is a Scotch Whiskey with unique characteristics and diversity in tastes such as sweet, mild honey and fruit, to bold peat and smokiness. An upper-end single malt scotch usually has a distinctive smokey, peat flavor. This is because the germinated scotch malt is usually dried over a peat fire. Most single malts are aged quite a bit longer than the typical blended Malts. 12, 18 and 20 years of aging in the cask is very typical for a good single malt scotch. Even the most profoundly smokey and medicinal of single malt scotch flavors is usually a very smooth whiskey. The longer the scotch ages in the cask, the more of it's alcohol it loses and the smoother and more complex in taste it will become. Note, that aging in the bottle adds nothing further to the flavor and smoothness of the scotch, It is only the aging in the cask, that counts.
Oak Casks are not airtight and so the surrounding air also plays a role in it's flavor and in the evaporation of the alcohol. For instance, casks by the sea will give some scotch a saltier flavor. Alcohol which is lost through evaporation of the air is known as the, Angel's Share.

Singleton, 12-Year Speyside Single Maltis an extremely pleasing tasting whiskey. It begins with a light and fruity nose. At first sip, is the sweet taste of cherry life-saver, then darker tastes of cherry-fruit, bubble-gum and even vanilla. The taste rounds out very nicely and smoothly, leaving your taste buds ringing with pleasant after tones of butterscotch and almond. I believe that Singleton 12-year is one of the best, all-around whiskeys you can buy. This is an excellent way to introduce first time scotch drinkers to single malt whiskeys. My wife and I enjoyed sipping on Singleton 12-year, straight up in a single malt class last night and we both agree that there is not a whiskey drinker around who would not enjoy this from the very first sip. This particular single malt compares very favorably more expensive Single Malts like Macallan, if not better! On my Scotch Ratings, I ranked this one a notch below Glen Farclas, but pending another tasting, I may update soon.
